Warm Broccoli & Cheddar Quinoa
Ingredients
- 1 hd Broccoli, shaved thin
- 1 ea Red Onion, small, julienne
- ½ cup Toasted Nuts, almonds, pecans or hazelnuts, chopped
- ½ cup Golden Raisins
- 2 cups Quinoa, cooked
- ¾ cup Adams Reserve Cheddar, grated
- ¼ cup Greek Yogurt
- 2 T Extra Virgin Olive Oil
- 2 T Red Wine Vinegar
- 1 T Honey
- ½ t Kosher Salt
- ¼ t Fresh Ground Black Pepper
Instructions
- In a saute pan over high heat, add the olive oil and the onions, saute for about 30 seconds. Then add in the raisins, yogurt, vinegar, honey, salt & pepper, stir to combine. Add in the shaved broccoli and nuts, toss with the dressing and saute until the broccoli is warm. Put the quinoa and cheddar in a mixing bowl and pour the broccoli mixture over it and toss to combine. Serve Warm
