Whipped Cheddar & Chickpea Spread
Ingredients
- 8 oz Adams Reserve Cheddar, shredded
- 8 oz Cream Cheese
- 8 oz Sour Cream
- 2 t Kosher Salt divided
- 1 pint Grape Tomatoes
- 1 can Chickpeas
- 1 T Zaartar Spice
- ½ C EVOO
- ½ C Chopped Parsley, fresh
Instructions
- Preheat the oven to 425º F
- In a mixing bowl, toss together the tomatoes, chickpeas, 1 tsp salt, pepper & EVOO. Spread them out on a cookie tray and bake them for 20 to 25 minutes or until the chickpeas are crispy and the tomatoes are blistered.
- While those are baking, puree the sour cream, cream cheese, grated cheddar, and 1 tsp salt until somewhat smooth, about 1 to 2 minutes, scraping down the bowl a few times. Once smooth, transfer to a wide gratin dish and spread into a ½” thick layer.
- With about 5 minutes to go on roasting the chickpeas and tomatoes, place the cheese spread in the oven. In about 5 minutes or when the cheddar spread is warm, remove it and the tomato/chickpeas from the oven.
- Sprinkle the tomato/chickpea mixture with the zaatar and then transfer all the tomatoes, chickpeas, spices, and oil to the top of the warm cheddar spread. Top with parsley and serve with your favorite crackers & crisps.
