Chicken Tamale Pie
Ingredients
- 8.5 oz Boxed corn bread mix
- ½ C Whole Milk
- 1 ea Egg
- 4.5 oz Green chiles, diced
- 14 oz Creamed corn
- 1 lb Ground Beef
- ½ t Ground Cumin
- 1 t Chile Powder
- 2 t Hot Sauce
- ½ t Kosher Salt
- 10 oz Red enchilada sauce
- 2 C Adams Reserve Cheddar, shredded
Instructions
- Preheat the oven to 375ºF.
- Mix the first five ingredients together and pour into a lightly-greased 9x13 baking dish or 10” cast iron skillet. Bake for 20 minutes or until just set in the center.
- While the cornbread bakes, brown the meat over high heat and season with the cumin, chili powder, salt and hot sauce. Once cooked and the cornbread is baked, Spread the meat on the cornbread, cover the meat with the enchilada sauce and top with the cheese. Bake for another 15 minutes and garnish with optional ingredients such as salsa, avocado, green onions. Serve warm.
