Ingredients
- For the Shrimp:
- 1 # Shrimp, peeled
- ½ t Kosher Salt
- 2 t Your Favorite Spice Rub
- 2 t Extra Virgin Olive Oil
- 4 Adams Reserve Cheddar Slices
- Skewer the shrimp on bamboo or metal skewers, keep them very tight together. Season them with the salt and spice rub, then brush them with the oil. Then on a hot skillet or grill, cook them about 3 minutes on each side. Once the first side is cooked and you flip them, top the cooked side with the slide cheddar, keeping the cheddar from overhanging the shrimp too much.
- To Finish the Tacos:
- 4 ea Tortillas, corn or flour, your choice, warmed
- ½ # Tomatoes, sliced
- ¼ C Red Onion, julienne
- ½ C Peppers, julienne
- 1 Avocado, sliced
- ¼ C Cilantro Leaves
- 1 Lime, juiced
- ½ t Kosher Salt
Instructions
- In a mixing bowl, while the shrimp are cooking, toss together everything except the tortillas. Once the shrimp are cooked and the tortillas are warmed, place a skewer of shrimp in each tortilla and remove the skewers. Top with the “salad” and serve immediately.
