Ingredients
- 1 C Onions, fine diced
- 2 T Fresh Garlic, fine chopped
- 3 T Extra Virgin Olive Oil
- 1 # Ground Beef Chuck
- 1 # Ground Pork
- 3 Eggs
- 2/3 C Panko Bread Crumbs
- ½ t Italian Seasoning
- ½ t Fennel Seeds, crushed
- 2 T Fresh Parsley, chopped
- 1 C Adams Reserve Cheddar, grated
- 2 T Kosher Salt
- ½ t Fresh Ground Black Pepper
Instructions
- In a sauté pan over medium-high heat, sauté the onions and garlic in the olive oil for about 2 minutes or until the onions turn translucent. Transfer the onion mix to a bowl and refrigerate and chill.
- In another bowl combine all the remaining ingredients, including the chilled onion mixture and mix thoroughly. Using a scoop of your desired size, scoop the meatball mixture and round into shape, then place onto an oiled sheet pan. Roasted in a 400°F for about 10 to 15 minutes, depending on the size meatball you made. Serve while warm or chill and refrigerate for up to 3 days or freeze. These go great as an hors d'oeuvre or over your favorite pasta & sauce.
