Ingredients
- 2 cans Black Beans, drained
- 1 C Panko Bread Crumbs
- 1 Egg
- 1 T Fresh Garlic, fine chopped
- ¼ C Onion, fine diced
- 1 T Extra Virgin Olive Oil
- ½ t Dark Chili Powder
- 2 T Fresh Cilantro, chopped
- ½ t Kosher Salt
- ½ t Fresh Ground Black Pepper
- ¾ C Adams Reserve Cheddar, grated
- 6 Adams Reserve Cheddar, sliced
Instructions
- In a sauté pan over medium-high heat, sauté the onions, garlic and chili powder in the olive oil for about 2 minutes or until the onions turn translucent. Transfer the onion mix to a bowl. Add in the remaining ingredients, except the cheddar. Mash everything together with a potato masher or the back of a fork until the beans have broken down but still has a few whole beans in the mix. Fold in the cheddar, cover the mixture and refrigerate for 20 minutes.
- Form into "burgers" and sauté them in a little oil or butter. Be sure the inside of the patties gets above 165°F to be sure the egg has fully cooked. Top with a slice of cheddar and serve while still warm with your favorite bun, toppings and sauces, chipotle mayo would work great.
