Creamy Tomato Bisque
with Adams Reserve

  • 1 T Extra Virgin Olive Oil
  • 1 C Onions, chopped
  • 1/2 C Carrots, chopped
  • 1 t Fresh Garlic, chopped
  • 1 28oz can Diced Tomatoes
  • 1 T Fresh Basil, chopped
  • 1/2 C Heavy Cream
  • 1 T Balsamic Vinegar
  • 2 T Salt
  • 8 oz Adams Reserve Cheddar, shredded

In a medium pot, combine all the ingredients, except for the cheddar. Bring to a simmer over medium heat and cook for 30 to 45 minutes or until the carrots are tender. Remove from the heat and carefully puree with the cheddar in a blender until smooth. Strain through a strainer and serve.
