Adams Reserve Cheddar Meatballs

Yields 20ea 2oz Meatballs

  • 1C Onions, fine diced
    2T Fresh Garlic, fine chopped
    3T Extra Virgin Olive Oil
    1# Ground Beef Chuck
    1# Ground Pork
    3 Eggs
    2/3C Panko Bread Crumbs
    ½t Italian Seasoning
    ½t Fennel Seeds, crushed
    2T Fresh Parsley, chopped
    1C Adams Reserve Cheddar, grated
    2T Kosher Salt
    ½t Fresh Ground Black Pepper

In a sauté pan over medium-high heat, sauté the onions and garlic in the olive oil for about 2 minutes or until the onions turn translucent. Transfer the onion mix to a bowl and refrigerate and chill.

In another bowl combine all the remaining ingredients, including the chilled onion mixture and mix thoroughly. Using a scoop of your desired size, scoop the meatball mixture and round into shape, then place onto an oiled sheet pan. Roasted in a 400°F for about 10 to 15 minutes, depending on the size meatball you made. Serve while warm or chill and refrigerate for up to 3 days or freeze. These go great as an hors d'oeuvre or over your favorite pasta & sauce.
